What do you guys prefer and why?

Ive heard that stainless steal expands way to much in the heat like 30% or so.

Also do you guys like or dislike jet hot coated headers.

Is it true that if they crack then its real hard to weld the becuase of the jet hot.

stainless cracks less than mild steel.

Stainless also can warp like a mother when welding or extreme heat.

If I were doing it I would use Mild steel flanges and Stainless pipe. You get the best of both worlds.

Jet hot is a bitch to weld onto. Even after you clean the surface of the metal bare the oils from the coating still tend to blow holes in the bead. It can be done but you won't get A+ welds
