If you haven't replaced the quadrant and are still running stock cable, with the car off and in 1st gear, pull clutch pedal up until it snaps/pops, and then push the pedal in. That will adjust the clutch

The Quadrant might be stripped and needs replacing. The teeth have a nasty habit of doing that then the clutch goes out of adjustment and wont release with the pedal down.

does it grind when you try and put in gear or is it just really hard? And how does the clutch feel in the other gears? does it catch right off the floor or does it seem ok?

Do you have a short shifter? If the stopper bolt isn't adjusted correctly, it wont allow it into gear.
