long shot but also something to check after you verify with a known good gauge as said above would be your clearance between the bottom of the pan and your oil pickup i noticed you said that you have an aftermarket pan so its a possibility. also has this always been like this or just recently started happening?

Sounds like you need some n2o injected directly into your oil pump
Kidding... anyway I'd check the connection. I had a problem like this where the wire was frayed and only had a few strands left right at the connection point

I had the same symptoms right before a piece of metal lodged itself in my oil pump causing my oil pump drive shaft to snap. I dont think the oil pressure issue was related to the sudden piece of metal binding the oil pump. Upon inspection of the bottom end, it had excessive bearing clearances and I suspect it was the loose clearance that caused the oil pressure issue.
My car was a bone stock 5.0 with about 150k miles on it though. Good luck and hope your engine doesnt have the same outcome as mine did.

oil is thicker when it's cold, so the pressure will be higher then.
