I don't know what thermostat to run in my car. It is a stroker motor with an s-trim and it has the stock 195 in it should I ran the 180 or lower???? Albert

The Ford EFI motor was built to run at 192 degrees for emissions purposes. Nothing wrong with swapping to 180 especially in a boosted car, as the coolant temperature indirectly affects the air charge temperature through the EGR and also through the intake which gets a thermal conduction from the coolant passages.160 is probably too much, and increases cylinder wear. Of course if it's a race only car, and your cooling system is not up to par, you might *need* the 160, but that's only a stop-gap fix. In that case you actually need a better cooling system. More fan, bigger radiator, etc.

but if its a EEC controled '94+ electric fan, the only thing a 180 thermo will do is make warm ups take a bit longer, since the EEC will still wait until 192ish degrees to turn on the fans

Isn't the fan temp setting one of the parameters "the 4.6 dudes wit blowaz" always get set with one of those "custom" chips?
