stud mount doesn't need shims to adjust.

Ddepending on how much driving you do, you have to keep adjusting them. On the pedestals you dont.

ped mount is for more user freindly stock long block with a million bolt ons, stud is for more custom, seriouse, stronger set ups. an if there not solid you only need to adjust once, twice if your really annal after break in, if you have to adjust a non solid lifter set up more than 2 u got some other issues that need attention

can you mount either type on any heads or are there stud mount/pedestal mount specific heads?

they're specific to the heads, but they're are conversion kits out there for ped. to stud mount. not 100% sure on that, someone correct me if i'm wrong.
