Let me break it up for you.
Roller 1000-2000 Complete rebuilt motor with aluminum heads, cam, intake - $3500 to $5000. Tranny $500 to $2500 Cobra 5 lug with rear end $1000 Paint 1000+ Interior 300-1000
Only buy a project if your going to keep it for years if not than buy something built already for 6-8k so you dont lose money.

A foxbody ground-up build is a terrible investment. If you genuinely want a nice foxbody built to your personal preferences, go right ahead, but understand that your time and investment will give you poor returns should you decide to sell the car.
Modified cars are poor investments anyway, foxbodies are worse than average.

So 4.6 Mustangs are a better investment? Cars in general are a bad investment unless you have something that attracts a lot of buyers like a 93 Cobra, 03-04 Cobra, 2000 Cobra R, 67 Fastback, 70 Chevelle, 69 Camaro, 55-57 Bel Air, 64 Impala, 64 GTO, 77 Trans Am, etc., the problem with Foxbodys here is smog and the cost of living here is too much, try to see what a Foxbody goes for in North Carolina or Texas, if we didn't have to smog them and it was cheaper live here, you would see them go up in value.

Def a bad investment but if your willing to fork it out DO it, them numbers up there are like super low , i was 20k into a fox at one point and relized it could never be sold. Everything adds up and you either prepare to take a huge loss or keep it and enjoy it

A project car and an investment are two different things in my opinion.
I currently have a project car that I enjoy working on, I'm building it the way I want to, mainly to enjoy and drive. Yes, it cost quite a bit of money to do this but that's the project and hobby of it. I have no intention of selling it.
An investment car would be more like a show car or something you're going to restore, then sell for a profit.
I don't know but looking at the prices people are asking for foxbodies, seems their value is going up a bit. There sure aren't very many on the road these days....at least I don't see many.
