I'd suggest using a flat clear on top of your flat paint. I can tell you from experience that the hot rod black/flat paint I did on my car looked good for a while..... Until you get it dirty. Without a clear coat it's going to be more difficult to keep it clean under there. If you were to go with a shinny black, it would show every little imperfection in the engine bay. I'd also suggest prepping it as best you can before you start laying down your paint.
*** If you got the time to experiment a little. You can mask off a couple different areas and try different combinations until you find the one that you like best. Good luck and nice project.

Take some red scotch brite pads to it and then paint it with Osh brand semi gloss black. Try masking the fenders and cowl so you don't get overspray again. Now is the time to do it right.
