If I do not use the 1" spacer with my manifold I can use my stock hood. How much is really gained from the use of the spacer?

1" adds to the runner length so you'll gain low-end TQ.
If you're asking how much is gained by keeping the intake cool....that depends. If you're still running an EGR valve & spacer, there's no real gain as the EGR lets in hot exhaust gasses & the spacer has hot water running through it. Eliminate the EGR & spacer it the intake spacer will help to keep the upper cool.

I've seen consistant 12-15HP on N/A motors from cooling off the upper intake & keeping the bottom end hot. But this was done on a dyno with a fan & a bag of ice on the intake manifold....so the #'s are gonna be higher than what you'd gain from a spacer on the street/strip.
