After starting my car when it's cold the Temp Gage go's between Cold and Hot right a way. It never go's all the way to Hot, just 3/4 of the way. Could be a lot of different things. Start with the simple shit:
- Make sure your coolant level is good. - flush out your cooling sysem. - run 180 degree thermostat (if you aren't already). - Check for leaks

Sorry to be negative- sounds like a blown head gasket. Remove the radiator cap and see if there is pressure in the radiator even before it warms up.

Have you checked to see if your fan is turning on?
