Do I need threadlocker for any of this stuff? I did not use any the last time. This time around all the little stuff comes to mind.

I always use the red loc tite on them. Basically set up your valve train so that you know if you are running any shims or not. Once final height is determined spray carb cleaner down where the pedestal bolt goes, blow it out, put loc-tite on the bolt and re-set the roller rocker as this insures the bolts stays at the proper pre-load.

If these are aluminum heads use just a touch of loc-tite as you don't want a big glob which can lock the bolt in for good.
