my friend has a fox body with a t5 that he is parting out and I have first dibs at whatever I want. If I was going to put the t5 in my 66 mustang (currently a c4) could I use the pedals/ clutch stuff on my 66 or will I need 66 mustang pedals and go to a cable clutch?

I would recommend using the 64-66 pedals. I did the conversion on a 65 and a 67 and both used correct era pedals and bought a cable conversion kit.
You need the pedals from a factory 3-4 speed car ( manual pedals )

as Sinister said get the stock pedals for your year cheaper and easier cant think of the page off my head some places have the clutch pedal rebuilt with bearings for smoother feel or a kit

As 70 said, there's hundreds of swap information sites. I basically bought complete 87-93 ( use an 87-93 trans, you'll thank yourself later ) and just pieced the rest of it together.

only part I dont know about after reading all of these is if I can keep the stock master cylinder/ how to route the clutch cable
