Tried to do some searching and came up empty... My power steering is just way too touchy. It feels like it has way too much pressure and is over assisting. Is there a valve or reduction plate plate i can install to reduce pressure? This is on an 88 GT.

Power steering pressure can be reduced by slowing down the power steering pump with pulleys. An underdrive pulley on the crankshaft will slow things down but that includes the alternator and water pump.
Ford had a larger diameter pulley for just the power steering pump that would help. I'm not sure I kept the box to provide a part number and Ford stop making it anyway. In any case, it's the power steering pulley that was stock on the Thunderbird Supercoupe. You might be able to find out what the Ford part number is and find a used one or there might be an aftermarket alternative.

Other than don't use an underdrive pulley on the crankshaft, I don't have any ideas as I never looked into that.

you need a heidts valve. its an adjustable power steering valve

Swap to a SN-95 rack. Preferably 03/04 Cobra (unless you can get your hands on an '00 R rack) They are much more firm feeling.

There is a pressure relief valve where the hose attaches to the pump. I have just the opposite problem. I have not looked into changes by year but the pumps did change
