High flow 180 stat from Mr. Gasket. The high flow is needed because my cars have 347 motors which make a lot of heat. And the 180 is because that's where you get the best performance.

I run a 192 but that's more for engine life. A colder engine wears faster. For what it's worth I run a 331 w/9# of boost, a stock radiator, 106,000 mile old factory waterpump that is underdriven and I've never had an overheating problem. Car still has working A/C. I run water + water wetter + waterpump lubricant. The car hasn't seen anti-freeze in 9 years.

Wow! And no corrosion? I'm impressed! No wonder you don't have cooling problems.
Although a 331 has way less friction than a 347...

I have 180 but when i bought the car it had a 160 in it and i never saw the temp guage move EVER. So that freaked me out and i went to 180. I noticed i have a coolant leak somewhere on my radiator so before summer i am going to replace that.

180. I have read that you shouldn't run anything lower than 180 in a 5.0 Mustang because it does not allow the car to heat up to operating temp.

Correct. 180 is as low as you can go before the ECU will pull timing, and your AFR will not be optimal below 180. Higher than 210 the ECU will also pull timing so you want to stay in a fairly narrow temperature band. Timing is everything!

I run 195 stat because anything lower than that causes exsessive engine wear and wastes fuel.
