How difficult is it to replace the clutch on a '98 GT w/o a lift(w/ jacks + jackstands). Any tips, warnings, etc...

It depends on how good you are with a wrench...
It's always a good idea to replace the pilot bearing and rear main seal while your changing your clutch...And it's always best if you get the right tool for doing the pilot bearing and rear main seal...
Don't forget about a fluid pump to pump fluid into the transmission after you drain it to pull it out...Your T45 takes DEX III ATF oil....
The higher you can get the car the better...

Yeah if you've never done it before it could be tough for you and will probably take most of the day. But if you have an idea of what your doing and can turn wrenches good, you could do it in a few hours.

If you've never done a clutch job before I would expect that it would take you at least the day to complete if not longer doing it on your back. People who have done them prior can get them done typically on their back in about 5 or 6 hours. Call ahead of time and find a local machine shop to re-surface your flywheel. A good plan is to spend one day removing the parts, getting the flywheel out for re-surfacing and also installing a good clutch quadrant and cable. The following day re-installing everything.
