I have a PS leak on my 91 coupe and was wondering what would most likely be leaking my power steering pump or the rack and pinion?

Uh, why not clean it, and see where it's leaking from? More than likely it's the power steering pump, it has a big o-ring which attaches the pump to the resevoir. But there's no way to tell for sure unless you look for the leak.

Or it could be leaking from the hose. my some how got a hole in the hose and was spraying it all over the under side of my hood

I had a leak after replacing my pump, and it ws the high-pressure line, the o-ring wasn't sealing it. so I just put a new o-ring on and it hasn't leaked since. before i replaced the pump, the low-pressure line was leaking, I just replaced the tube and it stopped.

how hard is it to do one of those rebuilds that they have like at autozone.
