you can dye all of the plastic and vinal pieces in the vehicle (dash, consol, door panels, etc). That will be labor, but MUUUCH cheaper, and easier to find black interior pieces for a fox, as they are pretty gighly desired.
As for the seats and whatnot, you're going to have to check wrecking yards, etc. Keep in mine that any year mustang seat till 2003 (so far) will bolt directly into your car with no modifiactions. I'd suggest picking up a nice set of newer gen seats, makes a nice touch.
If you are looking for a place to do the install...save yourself the cash and do it yourself, put the money into parts for your car's interior, and not in paying someone else to do a simple job.
As for the interior dying, I do that for my job. There are several different companies that make proiducts that are sold at kragen etc. I use only the best quality products from a wholesaler based out of sacramento and florida, but the paints you can buy in stores work just fine assuming you prep everything correctly.
Make sure when you do the plastic or vinal dying, to use a sylicone based cleaner to remove all oils from the material, and use something like a 400 grit sandpaper to LIGHTLY scuff the surface, to help the paint adhear to the surface.

if you got all of the interior done profesionally at a decent interior shop, your probably looking at a couple g's believe me i've looked into it, thats complete though, but damn thats lots of money, shit,if i were you i'd just look around, you'll find some black interior eventually, as i just bought almost all of JohnB's black interior hate to rub it in. whats expensive is custom interior, roughly 4g's depending. but hey to get you started, i've got a black center console 60$ and its yours, its a start.

Just look around for a complete black interior if you don't want to do all the painting/dying yourself. My buddy just picked up a whole black interior for $500.
They're out there.
