first thing to check is if the clutch is releasing all the way. If you have an adjuster let some slack out.

Sounds like a broken tooth on one of your gears...The T5 is a "constant-mesh transmission", Which means that the gears(1,2,3,4 & 5) are constantly connected..When you change gears your only selecting which gear ratio you want to transfer the engine/input shaft power on to the output-shaft..
Is the grinding noise worse in certain gears?

Most likely your syncros are on the way out if not out already, or your shift fork is jacked. But I'm almost positive that it's most likely your syncros.

I'm pretty sure if it was the syncro's, it would grind while trying to put it in gear not when you letting out the clutch, like he said..

yeah it sounds like the syncros. is it a loud metal gringing or kind of a wheezy grinding sound?
