If you did learn how to weld/fabricate, how would you use your skills. What would you build?

i'd put on some subframe connectors, then a custom side exhaust (i guess i'd need a pipe bender for that too), maybe a roll cage. i'd fix my e-brake bracket that tore off the driveshaft hump on my floorpan.
i'd buy an old jeep CJ7 and fab up a beast

I'd launch engine blocks with my welded up trebuchet too. Probably about the same weight as your average frig.

i dont know what kind of suspension work i could weld on to a SN95 mustang. it might be neat to have t-tops on it though
maybe go around and weld peoples doors shut for fun

and yes i have obtained so much welding knowledge it is flowing out ass and ears (so, sorry no more knowledge will fit up my ass)

If I knew how to weld, (and knew how to apply it efficiently and correctly to my work) hence knowing how to weld I would...
probably just buy and weld in some sub frames
