My car has done this 2 times in the past week, I will be cruising along and all of a sudden the engine just shut down, not die but stops producing power for a second or 2 then it goes back to normal, and the rpm's drop all the way to 0 then come back up to normal. What the hell?

Check the coil wiring, my 95 gt did the same thing. It would shut off and then just turn on again. Problem was my coil wiring was bad. The wires were lose inside the connector that plugged in to the coil.

If it's a fuel injected car I would look into the TFI module. Main cause of most short in ignition problems. Otherwise double-check all ignition wiring for good connections.
