I was wondering what would be considered a safe air fuel ratio on a 347 stroker in a foxbody?

Best thing would be to ask an experienced tuner but prolly 11:1 would be very safe.. Might be a little rich for NA application

anything over 14:7 is lean

Fasthatch is right 14.7 is stioch or perfect middle between lean/rich. My old setup ran 14.7 through the rpm range except a short stint in 14.6. This was maxing out 30 pound injectors. Which wasn't bad because it didn't lean out inthe rpm band at all and is perfect in dunk conditions but in practical use a little rich is better safe than sorry because in most cases u aren't montering a/f constantly on an n/a setup

Would I possibly see a benefit from leaning the AFR out a little bit or would it be best to leave it how it is?
