Take a hacksaw blade and push it down the frontpart of the headrest post until it unlocks. Then push the headrest down and up.

I read in the shop manual that there is some sort of release inside the seat. I just haven't figured out how to get at it

the back of your seat will unzip which will give you access to the headrest release. Now it isnt fun and may take a bit but what i do is get a long screwdriver and pry the release enough to allow it to come out.then push down on the headrest then pull it up and it is out.

The lock is on the front part of the lower half of the headrest post, I used the thinest hacksaw blade that would fit into the front part of the post. get the blade as far down as you can and move the headrest up and down while keeping the blade in place. It is a pain in the ass.But it works.
