Does anyone know whether I will be able to fit 17 x 9 with +26mm, 6.11' backspace with 255-45 under a 91 convertible GT? If I can't, then what do I need to make it work. Thanks in advance.

Is that 255/45/17 all around? If so you will rub bad in the front and the rear. I would suggest a 235 or 245 for the fronts and get 275's in the rear. Roll your rear fenders and you wont have any rubbing issues.

Is rolling the rear fenders a difficult task? How much would it cost to have it done? Just to make it more clear for myself, I be fine with going 235/45/17 in front and 275/40/17 in back? By the way thanks for taking the time to reply.

You will be fine with 235s up front. Depending on the backspacing and whether or not you have quad shocks, you might be able to get those 275s in the rear without rolling the fender lips. If you need to do so, be careful or you can damage(crack) the paint on the bottom edge of the fender.
