What are the advantages of switching out the spindles on a 85 5.0 to the 87-93 spindles?

you get to upgrade from the 10" 4cyl style front brakes to the 11" `87-`93 v8 style front brakes.

Whats the performance difference between the 85 and the 87-93 disc brakes? Is it a noticeable difference?

it's quite noticable, the `85 v8 brakes are the same as the `87-`93 4cyl brakes.
if you're changing the spindles/wheel bearings/calipers/pads though I would personally just put `94-`95 spindles and go 5 lug.

I did go 5 lug with the sn-95 stuff but my friend with a 85 wanted to redo his brakes i.e brake pads rotors ect, so i just let him have my 4 lug stuff but he wanted to see if it was any better before going through the trouble of changing out the spindles.
