It seems to move up and down alot, meaning it doesnt really stay in one place. For example, its in the middle(normal) for a bit, then it starts going down, then it moves back to normal.. Any clue what it could be? Need a new thermostat maybe?

Sounds like its just low on water, but might be something more than that! Does the heater blow hot the whole time, or will it get cold then hot again?

Try changing the temp sending unit- they can get crunchy over time, and the resistance values go out of wack. My neighbor's car was interesting, as her sender would loose all resistance at around 120*, tell the ECM that it was -140*, and freak out the mixture for a moment. Man, GM cars are sweet....
