MT doesn't make one smaller one for my 17" bullits. Will they work-well? What kind of performance can I expect from the MT DR 275/40/17?

I wouldn't go wider than 265 on an 8" wheel. Past that, you'll be losing tread because of the bulge. But if they don't make a narrower tire then I guess you don't have a choice.

If you run a 275 on an 8" wheel just run the pressure about 28 lbs and they will wear decent. if you inflate them to 35 or higher you will wear out the center of the tire. I ran 255-50-16 on pony wheels and 275-40 on my 99 cobras and they were fine.
