i made an illegal U-turn it was night time and i didnt see the sign, is there a way i can beat this!?

Go back to the spot at night and see if you can see the sign.
Take pictures without the flash, print them out to show the judge.
If not, you have a legitimate argument.
You might want to ask a few people out there too and see if they have a problem seeing it. Take a poll if you will.
If you're going to a gun fight you need to bring a lot of ammo to win, the more the better.

I got one on Sloat/19th ave my motorcycle and I lost. The judge did reduce the fine significantly. Not sure why, maybe bc I wore a suit and tie...who knows. From $490 to $189...ill take that.
It won't hurt to try. Like Simone said, go back and take pics. Even better maybe the cop won't show up to traffic court. But you do need lots of ammo to win a gun battle. So polls, pictures, ect.
Traffic school is another option. I think it helps by not goin on your record...double check though.

One other thing, the road sign may be so old the reflective material on it doesn't do its job at this point.
There may be so much build up of soot and road grime from diesel exhaust etc. that its not doing the job anymore.
Also (this is harder to get) call the city and find out when the sign was installed at such and such intersection. Chances are it was installed 15 years ago or a lot more.
Also ask the city when it was last cleaned up of all the road grime? If they can't come up with anything to help you, that is good for you.
"Your honor, the city has no record of any maintenance of its city signage. Is it possible that because of the lack of cleaning or replacing of these old signs I couldn't see the sign"?
That my friend is reason of a doubt in your favor.
The court system is a business and there out to take your money like any other. If you don't make them money, they go out of business.
You need to come prepared with many things in your defense so there is doubt it wasn't your fault. Remember that.

there are many ways to beat that ticket. ,,,,,,,,,,,,,,,,,,,,,,, burn it, pee on it, hammer , flick it, step on it, do the duggie on it. ull get a notice in the mail an no body request to see your ticket again, so do whatever lol, just make it to court.,
