Do I have the legal right to say no to an employer who wants me to do Piece-Work when I was making an hourly with them previously? I'm a alarm tech

Are you union?
IF so call your hall but be aware you employment as at will and you can be terminated for any cause at any time.
If not you can quit and look for a new job.

How comparable are the charge rates for everything? Have you seen what they are offering? Calculate it and see if you can make it work I your favor first IMO. If they are trying to dry fuck you into a pay cut than maybe it's time to start looking for a different job but don't quit until you find one

Saying NO to an employeer when asked to do something is call insubordination and in most places is grounds for termination since Calif is an "At Will" state which means that the employeer or employee can terminate employment at ANY time for ANY reason,

Sounds like you went from being an hourly employee to being an independent contractor. If so, you must have signed some sort of contract where it would explain the responsibilities and requirements. If your company is taking you back and forth from hourly to contract back to hourly at their whim or whenever it saves them money...that is illegal.
