When driving my temerature stays in a very normal range. When I turn the car off the needle will climb up to almost the red. If I turn the key to the occilary possition the needle will drop back down to normal. I've never noticed this before? is it okay? normal? bad thermo? electrical? Should I even look at the temp gauge? how accurate are they?

that is normal, every mustang i have seen does the same thing

Every car does that. When you shut the engine off, you are no longer circulating fresh coolant/water through it so it sits in the block where your sending unit is and heats up.
