I'm looking to buy a clutch but as I'm reading the description for each one it states

"ENG 4.7L 289", 5.0L 302" & 5.8L 351" ENG. (63-79 ENG 28inoz bal.)"

Which is the right engine displacement but the balance of my engine is neutral does this matter or not is my question.

Balance doesn't matter but size does. You need to know if your flywheel takes a 10",10.5" or 11"
