You guys know better than I do. Is it worth it to convert a 2.3L to a 5.0L? Is it worth the effort or time? How much would I have to invest in dollars to complete the task? Should I just hold out for a 90-91 notchback? Let me know. I think it would be a great learning process but not sure its worth driving aroung in a registered 2.3L with 5.0L conversion.

I just got a good deal on a non-running 5.0 to swap a new drivetrain into, just wait around and you'll find one
I almost went with a car not worth a new set of tires, I waited a few more days and this one popped up

I'd do it in a heartbeat. Since the stang came with a 5.0 that model year, all you have to do is get a motor from that year or newer and have fun. DMV won't freak out... though you'll want to get more info on that from them.
The swap is not trivial. You'll need all kind'a nick nack parts. I'd see if you can pull the whole running gear from a donor car so you don't miss any brackets/mounts/wires etc..
