What will or could happen to your car if you put a whole bottle of NOS Racing Octane Booster
in a 1/2 tank of Gas. I did this a the car seemed really sluggish.... Was this caused by too
much Octane Boost in the 1/2 tank of gas?

Unless you have a power adder or a high compression motor, you will lose HP with octane booster. I'm willing to bet your motor is stock or near stock which would explain the slugishness when you increased the octane.
