is 160 degree thrmo. to much for a '97 cobra with mod's?

yes. No point to it. Car needs to run around 180-190 for the computer to leave 'warm up' cycle anyways.

might be ok for a track only mod.

thanx alot, some guy tried to convince me that a 160 be fine, seemed a little fishy...

With a factory electric fan car, a cooler thermo-stat will only make the car take longer to warm up. The computer will keep the fans off until it reaches a pre-defined temprature.
