I was driving down Calaveras Road today and I spotted these deer. Are these what they call the California Mule deer?

those look more like elk then mule deer

I think those are tule elk. Mule deer have lighter faces.

Females are cows, males are bulls.
And for the rack even though tule are the smallest subspecies of elk, that is stilla pretty weak antler set. If it were a black tail it would be a very nice rack.

For those that don't know...

Male Elk = Bull
Female Elk = Cow
Male Deer = Buck
Female Deer = Doe
